Dear Dawn and Aggie


Dear Dawn and Aggie,

I don't have a recipe for fava beans...

but how about garbanzo beans?

This entry is in response to the last two posts from Dawn and Aggie's blog,

(It's listed as one of my favorite blogs. Have you visited it yet? It IS "the cutest blog on the block.")

Dawn's past two posts have been about BEANS and it put me in mind of a recipe given to me by my brother Rick, who is developing his culinary skills. Here it is:

Rick's Roasted Red Pepper Hummus

1 can garbanzo beans, drained
One clove of garlic (I usually use more)

1T. extra virgin olive oil

1T. cilantro, fresh
2 roasted red peppers (I use the jar variety, rather than fresh)

Salt and pepper to taste

1-2T. jalapenos (again, I use the jar variety)


Put everything into a blender or food processor and puree until smooth. How easy is that???





Not there yet. A little more processing....







This was tonight's supper on the porch. I got these lovely little cucumbers at the farmer's market this morning, already had some cold chicken in the frig, grilled a couple of pieces of Greek bread, and sliced some cheese. I usually serve Havarti with this, but all I had tonight was provolone, which was good with it too.


We opened a cold bottle of Pinot Grigio (sorry, Mr. Hopkins, I didn't have any Chianti on hand), and had such an excellent summer supper, we've vowed to have many more like it this summer. (Thank you, Rick!)


I particularly like this recipe because I usually have everything except the fresh cilantro already in the pantry and it's really quite healthy.

That looks so good! See, we got you into bean mode, too. I'm making three bean salad tomorrow! Aggie & I had a PBJ sandwich for dinner - no beans today.

I didn't make hummus today but I did make a bean salad with green and wax beans, white kidney beans, black olives and zesty italian dressing. Excellent!

Sounds like a perfect dinner for these hot muggy summer evenings. Light and refreshing.
